Balsamic Meatloaf Volcano

This Homestyle Meatloaf with Balsamic Vinegar Glaze takes a classic comfort-food favorite and gives it just enough tangy-sweet polish to make it feel special. The meatloaf is tender, savory, and deeply satisfying, while the balsamic glaze adds a rich, slightly sweet finish that cuts through all that cozy goodness.
In our house, this is best served as a **meatloaf volcano**: a mountain of creamy mashed potatoes, diced meatloaf, sweet peas, and warm gravy stacked together into one glorious comfort-food eruption. It is hearty, fun, family-friendly, and exactly the kind of meal that turns a regular dinner into a memory.

Steps
- 1
Preheat oven to 350 degrees.
- 2
Combine all ingredients except for the last 3 in a bowl (suggest starting with milk and eggs beaten together, next add spices and Worcestershire sauce beat again, and finally add meat and bread crumbs) and mix together with your hands - yes, it really is easier that way.
- 3
Shape into a loaf form. Help loaf former tips: 1" high is recommended thickness and thin rectangle shape when shaping. Once formed place on a foil lined baking sheet.
- 4
Whisk together the final 3 ingredients and spoon over the top of the meatloaf prior to baking.
- 5
Bake in a preheated oven until the internal temperature reaches 170 degrees, about 65-70 minutes. Enjoy!
- 6
As the meatloaf bakes prepare mashed potatoes, steamed peas, and brown gravy (store packaged works just fine). When all items are ready, take a plate, line with mashed potatoes, then 2-3 slices of meatloaf on top of the potato bed, pour a large spoon of peas over the top of that and then ladle generous amounts of brown gravy over the entire stack.

This recipe makes for stellar meatloaf sandwiches the next day.
