Ingredients

Serves 6-8 servings
  1. 2.1 ozsun-dried tomatoes (or well-drained sun-dried tomatoes in oil) (60 g)
  2. 1.8 ozalmonds (50 g)
  3. 1 teaspoongrated Parmesan cheese
  4. 1/2 clovegarlic
  5. 2 2/3 tablespoonsextra virgin olive oil (40 ml)
  6. 1 pinchdried oregano

Cooking Instructions

    Soak the sun-dried tomatoes in a bowl of warm water to rehydrate them.

    Toast the almonds in a skillet for 5 minutes, stirring often.

    Squeeze the tomatoes and reserve the soaking water. Place the tomatoes in a blender cup with the other ingredients.

    Blend until smooth, adding a little of the soaking water if needed to reach the desired consistency.

    Use as desired and store in an airtight container in the refrigerator for 2-3 days.
