Ingredients

  1. 160 gcorn semolina
  2. 920 gwater
  3. 15 gbutter
  4. 25 gshredded Parmigiano-Reggiano
  5. 1 tspsalt
  6. NOTES:
  7. Play around with cooking time and butter/cheese timing
  8. The 1 : 5.75 cornmeal to water ratio seems good

Cooking Instructions

    In a medium pot add the water and salt. Bring it to a boil.

    Slowly add the cornmeal while stirring continuously with a whisk.

  3. 3

    Continue stirring untill thickened (5-10 minutes)

  4. 4

    Turn off the heat and add the butter while continuing to stir untill incorporated. Add and incorporate the Parmigiano-Reggiano.

  5. 5

    Leave coveted for 5 minutes before serving.
