Potato Poha

Rinse poha in clean running water in a strainer. Do not rinse it to much, else it will break & become sòggy. By rinsing, it becomes soft if they do not become soft sprinkle few drops of water on them in the strainer.

Peel the potatoes & chop them into small pieces. In a kadai heat oil. Once heated add rai & jeera, when they splutter add curry leaves, chopped green chillies, haldi. Saute it for a few seconds then add chopped potatoes & salt, saute it in medium hot oil till it becomes golden & crispy

Now add poha. Mix gently. Cook it for 2 to 3 minutes on a low flame. Switch off the gas. Add lemon juice again mix it gently.

Garnish it with fresh coriander leaves. You can also garnish it with fresh grated coconut. Serve hot.
