Heat a drizzle of extra virgin olive oil in a nonstick skillet with the green onion. Sauté for 1 minute.

Add the peas and mushrooms with about 1/4 cup (60 ml) water. Cook for 10 minutes.

Before adding the sausage, remove some of the mushrooms and peas and set them aside.

While the sausage cooks with the rest, blend the reserved peas and mushrooms with 1 teaspoon of pasta cooking water.

While the pasta cooks, return everything to the skillet and add 1 tablespoon of heavy cream.

Drain the pasta and add it to the skillet. If it seems dry, add 1 tablespoon of pasta cooking water.
