Ingredients

Serves 3 servings
  • 2/3 cuppeas (about 80 grams)
  • 1/3 cupmushrooms, sliced (about 50 grams)
  • 1small fresh green onion
  • 1/2Italian sausage link
  • 1 tablespoonheavy cream
  • as neededSalt and olive oil,

Steps

  1. 1

    Heat a drizzle of extra virgin olive oil in a nonstick skillet with the green onion. Sauté for 1 minute.

  2. 2

    Add the peas and mushrooms with about 1/4 cup (60 ml) water. Cook for 10 minutes.

    Before adding the sausage, remove some of the mushrooms and peas and set them aside.

  4. 4

    While the sausage cooks with the rest, blend the reserved peas and mushrooms with 1 teaspoon of pasta cooking water.

  5. 5

    While the pasta cooks, return everything to the skillet and add 1 tablespoon of heavy cream.

    Drain the pasta and add it to the skillet. If it seems dry, add 1 tablespoon of pasta cooking water.
