Take oil in a kadhai and keep it on high flame.

Add mustard seeds and curry leaves and let it crackle.

Add onions and caramelise till lift golden brown.

Add capsicum and cook for 2 minutes.

Add tomatoes and cook for 2 more minutes.

Wash poha with running water and strain.

Add spices to onion mixture and mix.

Add washed poha and mix and sprinkle with little water, cover with lid and let it steam for 3-4 minutes.

Garnish with roasted peanuts and serve hot.
