For my last recipe of March, I tried these croquettes that I hope even those who aren't big fans of turkey will enjoy.

Blend the turkey breast, then mix with the Parmesan, egg yolk, boiled and mashed potatoes, salt, and a bit of chopped chives.

Shape the mixture into croquettes and place them on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 30-40 minutes, turning them occasionally. You can also fry them; if so, it's best to freeze them for about 1 hour first.

Sauté sliced leeks in a pan with olive oil, then add the zucchini and peas. Season with salt, then blend everything until smooth to make a creamy purée.
