Prepare water in a pot, add the pandan leaf and sliced sweet potatoes. Boil the sweet potatoes until half-cooked.

Once half-cooked, add the plantains and palm sugar. Stir until the palm sugar dissolves.

When the sweet potatoes are tender, add the coconut milk and a pinch of salt. Stir gently for 2-4 minutes over medium heat to prevent the coconut milk from curdling.

Adjust the taste if necessary. Remove from heat and serve.
