An interesting twist I stumbled upon... I love it because the eggs really suck up the flavour of the 'pili pili hoho' ... A great way to switch up the normal way we do eggs

Get all your ingedients in one place

Cut up the capsicum carefully into rings
- 3
Put the pan on the fire and season with some oil and let it heat up abit
- 4
Select one, two or three capsicum rings and place them in your pan (depending on the size of your pan)

Carefully break an egg into each capsicum ring and let it set (don't worry sometimes some of the egg flows out of the ring)

Let it cook and continue setting for about 5 minutes, at this point I carefully poke the yolk with a folk and sprinkle my salt and the spices

Carefully flip the egg over in order to cook the other side.... Cook according to your preference on how you like your eggs done

Remove from the pan and garnish with coriander leaves or just as it is
