Steps

  1. 1

In a mixing bowl add maida, suji, salt and baking powder. Mix and make a dough using sufficient water. Make a soft dough.

  2. 2

Once the dough is ready, cover and let it rest for 30 mins.

  3. 3

Heat oil to very high. Just before smoky point.

  4. 4

Make 3 portions out of dough and then roll it thinner than a chapati but not much thin otherwise it wont puff! Cut it using a cookie cutter/glass.

  5. 5

Now drop these in very hot oil. Lower the flame and fry until golden.

  6. 6

Take the puris out from the oil and put them in a plate and let them cool.

  7. 7

For pani blend all the ingredients together in a jar and mix it in 1.5 litre water.

  8. 8

Mash the boiled potatoes and mix it with all the masalas. Serve
