Egg are very good source of inexpensive , high quality protein. More than half the protein of an egg is found in the egg white , which also includes vitamin B2 and lower amounts of fat than the yolk. Eggs are rich sources of selenium , vitamin D , B6 , B12 and minerals such as zinc , iron and copper.

Steps

Take a blending jar then add garlic, ginger, tomatoes(2 medium size), cumin seeds, dry red chillies & onion(1 medium size).

Blend them and keep aside.

Take 5 boiled egg in a bowl. Then add turmeric powder(1/2tsp), salt(1/2 tsp) & red chilli powder(1/4 tsp). Mix them well.

Heat pan & pour oil(3 tbsp). Add marinated boiled egg. Fry till golden brown & then take aside.

Add roughly cut potatoes to the same oil. Then add salt(1/2 tsp) & turmeric powder(1/2 tsp). Fry till golden brown & take aside.

Pour oil (2tbsp) to the same wok. Then add bay leaf and sliced onion (2 medium size). Saute it for 2 minutes.

After 2 minutes add masala paste, turmeric powder(1/2 tsp), salt(1.5tsp), coriander powder(1.5tsp), black pepper powder & sliced tomatoes (1 medium size).

Mix it well. Cook it for 5 minutes. Add fried potatoes and water. Cook it for 3 minutes.

Add fried egg, garam masala & coriander leaves. Again cook it for 2 minutes.

Ready to serve!!
