I tried something different and I loved loved it.

In a blender, combine the peeled bananas, eggs, oats,cassava and sorghum flour, baking powder and sugar.

Blend until the mixture is as smooth as desired. Allow the batter to sit for 20 minutes to slightly thicken.

Heat your pan over medium heat. Add a small amount of oil and pour a spoonful of batter and spread it.

Some bubbles will begin to form on the pancake. Fry it until golden brown and when browned, use a spatula to flip the pancake onto the other side to also brown.

Repeat this with the rest of the batter.

Serve hot with you favourite toppings such as bananas, nuts or honey.
