This is a family recipe we make every Easter week.

Wash and peel the potatoes. Once peeled, place them in a pot with water (no additives) and cook over medium heat until tender.

Once the potatoes are boiling and soft (you can check by piercing them with a fork or knife), remove from heat. Blend the potatoes with the milk and sugar to taste (remember, this is a dessert, so it should be sweet). Only blend with milk and sugar—do not add water.

Pour the blended mixture into a heavy-bottomed pot or saucepan. Add cinnamon to taste (I used 3 sticks) and a pinch of salt. Stir constantly until the mixture thickens completely and turns a caramel color. Taste and add more sugar if needed.

Note: Cook the mixture over medium-low heat. It may stick to the bottom, so stir constantly and scrape the bottom to keep the mixture smooth. For extra flavor, you can serve it with a bit of semi-salty cheese for a delicious contrast.
