Spinach and Cucumber Savory Pancake

Soak rice for 1 hour.

Put spinach leaves in hot water for 5 minutes.

Drain and wash rice and put in mixer jar.

Remove spinach leaves from hot water and put in mixer jar with rice.

Grind it into a fine paste.

Peel and grate cucumber.

Add finely chopped coriander and mint leaves.

Add this in spinach rice batter.

Add salt and maida and mix well to form a semi thick batter.

Heat 1 tsp oil in a nonstick pan.

Pour a ladle full batter in pan.

When one side cooked, flip it and cook from another side.

Serve hot with mint coriander chutney or tomato sauce.
