Ingredients

  • 2 gyeast
  • 200 mlwater
  • 200 gbread flour
  • 100 gsemolina (or wheat flour)
  • 12 gsugar
  • 2 gsalt
  • 24 golive oil
  • 2 tablespoonsolive oil
  • 1 bowlminced garlic
  • 1/3 bowlminced white part of scallions
  • 40 gbutter
  • 4 gsalt

Steps

    Mix the yeast with water.

    Combine the dry ingredients (bread flour + semolina) with sugar, salt, and 24g of oil. (If you don't have semolina or wheat flour, you can use all bread flour.)

    Pour the yeast water into the mixture from step 2 and mix well. Cover with plastic wrap and let the dough rest for 20 minutes.

    Take out the dough and knead for about 3 minutes until the surface is smooth. Add 1 tablespoon of olive oil, cover with plastic wrap, and let it rise for 1.5 hours.

    Take out the dough, which should have doubled in size, and press out the air.

    Roll the dough into a smooth surface and divide it into 4 equal parts. Roll each into a round shape about the size of your palm.

    Melt the butter in a pan over low heat, add the minced garlic and scallions, and sauté for about 3-4 minutes without browning. Add 4g of salt, then remove from heat and let cool.

    Layer the dough with the garlic butter mixture, stacking them.

    Use a round tool to press a pattern in the center, cut into 8 equal parts along the circle, and make an additional cut in the middle of each part (cut about 0.5cm inward). Twist each section outward twice and seal the ends underneath.

    Cover with plastic wrap and let it rest for another 25 minutes.

    Preheat the oven to 400°F (205°C) and bake for 28-30 minutes. Remove from the oven, and your crispy on the outside, soft on the inside garlic bread is ready to enjoy.
