Great way to use the stems from artichokes, especially when they are too fibrous to eat as they are. A great vegan pasta dish.
Steps
- 1
Cut the stems in pieces and halve the garlic cloves
- 2
Fry in a bit of olive oil until stems and garlic just starts to brown
- 3
Blend the stems and garlic with a little more olive oil, a couple of branches of parsley, salt and pepper
- 4
When cooked, turn the pasta in the remaining oil in the pan, then mix with the sauce
