Peppermint Jelly

I have quite a few varieties of mint (pudina) with different flavors and aroma in our garden. I decided to use peppermint for making the green jelly. It has incredible health benefits—relieves migraine, indigestion, bloating, anxiety, good for weight loss, confers immunity which we all need very badly with the outbreak of corona virus. Collected the leaves, washed, blanched, blended with two cups of water and a tbsp of agave nectar. Strained the liquid through a wire mesh basket, chilled in ice water bath. Dissolved gelatin in 2 c of boiling water, added the liquid with mint extract, mixed together, poured in four different containers and chilled for 4 hours in the refrigerator. The prep time is less than 30 minutes, but the resting time is nearly four hours—chilling in the refrigerator. Beautiful delicious mint jelly is the reward. #rainbowweek6

Make a checklist. Collect all the required ingredients and keep them within your reach.

Wash the leaves. Blanch them. Place the leaves in boiling water for 30 seconds. Remove the leaves and transfer the leaves to a container with ice water; Chilling would keep the leaves green. Drain.
The blanched leaves are about 1 cup. - 3
Blend them with two cups of water for a couple of minutes.
Strain the blended leaves in water through a wire mesh basket. Add agave nectar to the strained liquid. Wisk to dissolve the nectar. Now chill in an ice water bath - 4
In a bowl, dissolve the gelatin in 2 cups of boiling water. Add a drop of natural food color (optional) Make sure that the gelatin is completely dissolved. Add the mint extract to the dissolved gelatin. Mix thoroughly with a spoon.

You may chill the container just like it is or pour the gelatin mint mixture to glasses, cups or mould. Chill in the refrigerator for 4 hours or so to make sure the jelly has set properly,

The Jelly is set. Remove from the refrigerator. Taste and serve. If you want to pamper yourself and others at home, you may top the mint jelly with your favorite ice cream. Enjoy.
