Masala Macaroni

We Indians are well known for our habit of putting tadka in everything. So why should pasta be left behind. Yes, masala macaroni is one such desified pasta recipe. I am sure every Indian household has their own masala macaroni recipe. Some make it taste like pulao, others use a south Indian tadka and make it like upma. There is a huge lot which mix both Italian and Indian spices and add cheese too. And of-course, there is always a debate whether to add turmeric or not  . So what I am trying to say is that there is no one way to make this dish. This is my version; you go ahead and experiment with yours. Or make this to keep things simple and easy.

Ingredients

prep 10 mins, cook: 15 mins
3 servings
  • 1 1/2 cupMacaroni
  • 5-6 cupWater
  • 1 tbspOil
  • 1 tspSalt
  • For the vegetable masala
  • 3 tbspOil
  • 1 tspJeera /cumin seeds
  • 1large Onion diced
  • 1large Tomato finely chopped
  • 1Capsicum finely chopped
  • 1-2Green chilies chopped
  • 1 tspSalt
  • 1/2 tspGaram masala
  • 2 tbspKetchup
  • 2 tbspGreen coriander chopped
  • 1 tspMixed dried herbs

Steps

prep 10 mins, cook: 15 mins
  1. 1

    To boil the macaroni, boil 6 cups of water in pot. Add salt and oil to it.

  2. 2

    Add macaroni to the boiling water. Let it boil for 7-8 minutes or till done yet a little firm. Strain and keep aside.

  3. 3

    Simultaneously heat 3 tbsp of oil in wok or kadai. Add the jeera and let it turn golden.

  4. 4

    Add the onions, sauté the onions and let them turn golden.
    Now add the tomato, capsicum and green chilies. Cook and cover till the vegetables are a little soft.

  5. 5

    Once done then add the salt, garam masala, ketchup and mixed herbs. Now add the cooked macaroni. Mix well and serve hot with chai.
