35 minute crispy potatoes

Preheat the oven to 200°C

Roughly chop the potatoes keeping them relatively even in size

Place them in a saucepan with enough water to cover them and then bring to the boil

Once boiling reduce the heat and allow them to simmer for 10 minutes
- 5
Drain the water from the potatoes and shake them up the pan to increase their surface area and help make them crisp up faster in the oven.

Lay the potatoes on a baking tray, drizzle generously with oil and sprinkle with salt and pepper

Place them in the preheated oven and cook for 25 minutes
