Ingredients

  1. 2 1/4 poundsfine bulgur wheat (about 1 kilogram)
  2. 1 1/8 poundslean beef (about 500 grams)
  3. 1onion
  4. 1 tablespoonpaprika
  5. 1/2 tablespoondried basil
  6. For the filling:
  7. 2 1/4 poundsground beef (about 1 kilogram)
  8. 2large onions, finely chopped

Steps

  1. 1

    Soak the bulgur wheat in water for 15 minutes.

  2. 2

    After soaking, add salt, paprika, onion, and dried basil.

  3. 3

    Grind the mixture in a food processor once, then add the lean beef and knead well. Grind the mixture a second time.

  4. 4

    Knead the mixture thoroughly.

  5. 5

    For the filling, sauté the chopped onions in 1 tablespoon of butter until soft, then add the ground beef. When the meat is cooked, add spices and salt, and let the mixture cool.

  6. 6

    Once cooled, start shaping the kibbeh.
