Ingredients

  1. as neededcorn tortillas
  2. as neededChihuahua cheese (or substitute with Monterey Jack)
  3. 1/2 cupMexican crema (about 120 ml)
  4. as neededtomato puree
  5. as neededpork chorizo

Steps

  1. 1

    First, fry the chorizo in a little oil. Once it's cooked, remove it from the heat.

  2. 2

    In a skillet, add a teaspoon of oil and pour in the tomato puree. Season with ground black pepper, garlic salt, and regular salt to taste.

  3. 3

    Grease a baking dish with butter along the edges. You can use a microwave-safe or oven-safe dish, depending on your preference.

  4. 4

    Dip the tortillas in the tomato sauce you prepared, add the chorizo inside, and roll them up.

    Next, sprinkle the Chihuahua cheese (or Monterey Jack) on top, then pour the Mexican crema over the enchiladas.

    Bake in the oven for 4 to 6 minutes, depending on your oven's power. Enjoy!
