Ingredients

2medium bananas
2 tablespoonsvegetable oil
1 cupall purpose flour
1/4 cupwhite sugar
1/4 cupbrown sugar
2eggs
1 teaspoonvanilla extract
1 teaspooncinnamon
1 teaspoonbaking soda
1/2 teaspoonsea/kosher salt

Preheat the oven to 190c

Place the bananas in a large bowl and mash.

Add the oil, flour, sugar, eggs, vanilla, cinnamon, baking soda and salt and stir just until everything is combined.

Pour into a loaf tin lined with parchment paper.

Bake for 35-45 minutes. (Check with toothpick)
