Very berry cheesecake 😋

Heat an oven to 190C, cream the butter in a bowl until it is soft add the sugar and kept beating until the mixture is light and fluffy sift in the flour then knead the mixture.

Roll the dough into circles then place on a buttered pan and bake

After around 20 minutes check on the dough if it is still soggy put back in for another 5 minutes then take out and let cool.

When they are cooler cover the inside of a tin with butter and then your hands and get the "cookies" -which may be very brittle- and crush them into a cake tin then put in the fridge over night.

The next day get a large double cream and pour half into a bowl then get the soft cheese and whip the mixture up

After pouring the mixture on top of the base put the cake in the fridge

The next day put the strawberry s on the cake then if wanted you can pour strawberry puree on the cake
