Mexican Flour Tortillas

These tortillas are easy to make and you can use them for quesadillas, chimichangas, and Mexican burritos. Fill them with ham, chicken, beef, eggs, cheese, or anything you like. They're great for serving as a snack.
I especially like them for breakfast, filled with scrambled eggs. I add ham, sausage, and cheese.
When I mention cups, tablespoons, and teaspoons, they are all level and use standard US measuring cups and spoons.

Method
In a large bowl, mix the flour, baking powder, and salt.
Add the oil and mix it into the flour using your fingers.
Add the water and mix. Place the dough on the counter and knead it into a ball until all the flour is incorporated.
Roll the dough into a log and divide it into 8 pieces. Shape each piece into a ball, cover, and let rest for 30 minutes. - 2
Lightly flour the counter and use a rolling pin to roll each ball into a circle about 8 inches (20 cm) in diameter.
Heat a steel skillet over medium heat and cook the tortillas on both sides until golden.
Cover the tortillas with a cloth as you make them to keep them warm.
