Lachha Parathas are flaky, multi layered unleavened flatbreads that are popular in restaurant menus. Though many feel that it is laborious to make it at home, with the right cooking technique, it can actually be a lot of fun.
It is a myth that you need to use copious amount of ghee to get soft Lachha Parathas. We can do so using less oil.
I have made Chilli Garlic Lachha Paratha, an easy and flavoured flatbread recipe made with wheat, chilli and garlic. It can be a healthy alternative to the traditional vegetable stuffed or mixed paratha for lunch and dinner. It can be easily served with pickle and curd as it contains all the necessary spices in it but can be served with any curry recipe.

I have made Chilli Garlic Lachha Paratha, an easy and flavoured flatbread recipe made with wheat, chilli and garlic. Firstly, in a large mixing bowl take wheat flour.

To it, add garlic paste, oil and salt.

Mix well making sure everything is well combined.

Add hot water and mix with a spoon. Rest for 5 minutes making sure the wheat flour turns moist.

Add warm water as required and knead to a smooth and soft dough. Grease your hands with little oil and knead the dough for atleast 10 minutes. Kneading helps to get soft lacchas. You should get a smooth and soft dough.

Cover the dough with a lid/moist cloth/cling film and allow the dough to rest for 35-40 minutes. After resting the dough, divide them into equal portions and shape them into balls.

Lightly dust the work place and roll out one ball into a thin circle. Try to roll out as thin as possible.

In a small bowl, add butter, garlic, green chillies and coriander leaves. Mix well and set aside.

Using a brush, grease the rolled out portion with the prepared garlic butter mixture. Dust flour on top of the butter garlic mixture.

Now start fan folding the rolled out dough. Coil the folded dough to form a small circle. Tuck in the loose end. Press gently with your greased hand. Do this for the rest of the dough balls.

Dust little flour on top of the coiled dough and roll the dough into a circle.

Heat a pan and pan fry the parathas, using little oil, till they have cooked uniformly on both sides. You can pat the lachha at the edges with your palms to make it more flakier.

Repeat the process for the rest of the dough.

Serve Chilli Garlic Lachha Paratha with pickle, your choice of curry and fresh onions. I served them with homemade Chicken Curry. I also applied the garlic butter mixture on one of the paratha. It tasted delicious.
