I’m currently looking at ways to incorporate more protein into my food. The edamame really lift the rice. It’s a healthy balanced meal with around 650-720 calories per person. It’s also great for those non-fish lovers! Super tasty!

I’m currently looking at ways to incorporate more protein into my food. The edamame really lift the rice. It’s a healthy balanced meal with around 650-720 calories per person. It’s also great for those non-fish lovers! Super tasty!

Heat oven to 200°C fan or 220°C conventional.

Mix miso paste, 2 tsp soy sauce, honey, sesame oil, ginger, garlic, and lime juice.

Place salmon on lined tray, spoon miso mixture over.

Bake 12–15 min. For stickier top, grill last 1–2 min, watching closely.

Cook rice as per packet instructions.

Add edamame to rice for last 3–4 min. Drain and fluff.

Steam or stir-fry broccoli or pak choi until just tender.

Toss greens with remaining sesame oil and 1 tsp soy sauce.

Divide edamame rice into bowls, add greens, top with salmon.

Finish with sesame seeds and extra lime.
