Steps

Heat oil in a pan,add cumin seeds,green chilli,pinch of fenugreek powder and 2 bay leaves,let it splutter.

Now gradually add chopped potato,brinjal,onion and tomato and cook it for 2 minutes on low flame.

Now add all dry spices,kasuri methi,ginger-garlic paste and salt and mix it nicely and cook it again for 4-5 minutes on low flame.

Garnish with coriander leaves.

Potato brinjal tomato mix fry is ready to serve.
