Steps

Wash and clean the brinjal. Apply oil and roast in gas.

Once done keep it in a plate of water. Remove it's skin.and cut into small pieces.If it has too many seeds remove it.

In a kadai take oil and add chopped onions, ginger garlic and chilli paste and saute till colour changes.

Add chopped brinjal and all masalas and cook for 5-7 mins.

Add chopped tomatoes and mix well. Cover and cook till tomatoes are soft and mushy. Mash everything well and cook till oil starts to float.

Garnish with chopped coriander and serve with chapati or naan.
