Carolina-Style BBQ Sauce

My version of homemade Carolina-style BBQ sauce, which pays homage to all 3 regional styles of Eastern, Southern, and Western Carolinas. The basic foundation of this sauce is vinegar, tomato (ketchup), and mustard tastes ... with a balance of citrus-sweetness (fruit) and heat (peppers).
I prepare this each year (64oz) for a full-season of outdoor grilling or smoking. It’s not the full ingredient recipe mind you, but what the heck; it’s a good foundational start for you.

Ingredients

75 mins
  1. 3 Tbs.olive oil
  2. 1/2yellow onion, finely chopped
  3. 2jalapeno peppers, finely chopped
  4. 2-3 clovesgarlic, smashed
  5. 1.5 cupapple cider vinegar
  6. 1 bottle (32 oz.)ketchup
  7. 1 cupBBQ sauce, store brand
  8. 6 Tbs.dark mustard
  9. 2 Tbs.Worcestershire sauce
  10. 1 tablespoonlemon juice
  11. 1 tablespoonlime juice
  12. 1 can (8 oz.)pineapple bits
  13. 1/2 cupmolasses
  14. Dashpaprika & thyme
  15. Dashsalt & pepper
  16. Dashred pepper flakes

Cooking Instructions

  1. 1

    Add oil to a heated 3 quart pot over medium heat. Add the onions and peppers and sauté them for 3-4 minutes. Add the garlic and mix.

    Add all the liquid ingredients (but not the fruit & molasses) to the pot and simmer for 30 minutes over medium-low heat.

    Add the fruit pieces and very lightly blend the sauce using an immersion blender (or a blender in batches). Add the molasses and simmer this for 45 minutes on low-medium heat.

    While simmering, season with spices to taste as the sauce slowly thickens. Place in a large container when done. Refrigerate to further the thickening process before using.
