Prepare all the ingredients. I like to chop the vegetables very little to not feel big chunks. Big chunks in my case are pumpkin and sweet potato

Drizzle olive oil in a pot and add onion and garlic. Cook for 2 minutes

Add the rest of the vegetables

Add water, turmeric, black pepper, parsley and stocks

Gas mark 6 and once it boils, bring down to 4. Cook for 1 hour

You can either eat it like that or blend it to make a creamy soup
