One Cup Salad

This can be a side salad or a whole meal. Suitable for vegetarians, pescatarians, and vegans. However feel free to add chicken, lamb, fish etc if you wish.
I saw a salad dish online, didn’t have an ingredients list so I headed to the kitchen to see what I had. I wanted an even mix salad and this is what I came up with. Feel free to add, omit or substitute ingredients. Also feel free to vary the amounts to suit your tastes.

In a frying pan heat butter. Add chickpeas and corn. Heat thoroughly.

Add half the orange juice to the chickpeas and corn and continue to cook until they start to brown.

In a large bowl add the remaining ingredients. Mix together.

Add the chickpeas and corn. Mix together thoroughly.

Add meat here if you wish.
