This can be a side salad or a whole meal. Suitable for vegetarians, pescatarians, and vegans. However feel free to add chicken, lamb, fish etc if you wish.

I saw a salad dish online, didn’t have an ingredients list so I headed to the kitchen to see what I had. I wanted an even mix salad and this is what I came up with. Feel free to add, omit or substitute ingredients. Also feel free to vary the amounts to suit your tastes.
ENJOY!

Ingredients

  1. 1 cupcooked Cous Cous
  2. 1 cupcooked lentils
  3. 1 cupsultanas
  4. 1 cupchickpeas
  5. 1 cupcorn
  6. 1 cupchopped rocket
  7. 1 cupchopped fresh spinach
  8. 1 cupchopped watercress
  9. 1 cupdiced fresh tomatoes
  10. 1diced fresh chilli
  11. Juice of 1 navel orange
  12. 1 knobbutter (optional)
  13. to tastesalt and pepper
  14. Tips
  15. Cook the sultanas with the Cous Cous
  16. Canbe served hot or made in advance and served cold

Steps

  1. 1

    In a frying pan heat butter. Add chickpeas and corn. Heat thoroughly.

  2. 2

    Add half the orange juice to the chickpeas and corn and continue to cook until they start to brown.

  3. 3

    In a large bowl add the remaining ingredients. Mix together.

  4. 4

    Add the chickpeas and corn. Mix together thoroughly.
