In a pan put the water, sugar, butter, sultanas, ginger, mixed spice, bicarbonate soda and bring to the boil. Allow to simmer for 10 mins.
Let the mixture cool down before you add the eggs and SR flour. Mix well. Pour into a loaf tin. Pop in oven at 160°C (fan oven) / 320°F (fan oven) for 40 - 45 mins.
