Peel the 3 large potatoes and cut thin slices (fries), rinse, dry with cloth and deep fry them.

Cut the onions and tomatoes. Fry the onions, then put the garlic ginger, and green chillies stir then add tomatoe and let them simmer for 5 minutes.

Add tomato paste, a pinch of salt and sugar, black pepper, tumeric and mixed spices to the thick stew.
