Banana Bavarian Cream
No more overripe bananas going to waste.
Steps

Puree the bananas until very smooth. Soften the gelatin sheets in cold water. Heat the cream with the sugar and vanilla bean seeds. Drain the gelatin, squeeze out excess water, and stir it into the hot cream until dissolved.

Add the banana puree to the cream mixture and mix well. Beat the egg whites until stiff peaks form, then gently fold them into the banana mixture.

Pour into a loaf pan and refrigerate for at least 4 hours before unmolding. Decorate as desired.
