Ingredients

18 croissants
  • 500 gr.all purpose flour
  • 250 ml.+ 2Tblsp water
  • 50 gr.sugar
  • 7 gr.dry yeast
  • 10 gr.salt
  • 175 gr.unsalted butter
  • 1egg to brush them

Steps

  1. 1

    Mix the flour and the water. Mix the sugar and the salt and add to the batter. Mix the yeast and the 2Tblsp of water and add to the batter. Mix it with your hands.

    Knead on the table for 5 minutes. Cover and rest for 10 minutes.

    Knead it for about 3 minutes and shape it as a ball.

  4. 4

    With flour on the table shape it like a rectangle as big as your roll pin. Make sure you have enough flour so it doesn't stick to it. Put it on a tray and leave it in the fridge for 10 minutes.

    Get the butter and put it on a cling film, close it like a present and using the roll pin strech it half the size of the dough. Leave it in the fridge.

    With flour on the table put the dough on it and the butter on top. Close it like a present and with the roll pin strech it half way and then the other half. Fold in three like the picture. Get ride of the excess of flour. Cover and leave it in the firsge for 10 minutes.

    Repeat the last process another 2 times. You have to do 3 foldings in total.

    Take it again and strech it thin. Mark 10 cm. and cut the triangles. Leave them on a tray in the frigde for 10 min.

  9. 9

    Strech them with your hands a little bit, fill them with your toppins and roll them. Let them rest for 1 h 30 min. Brush the egg on them and bake them at 180ºC for 25 min.
