Sweet Gachas for All Saints' Day

My mother and aunt used to make these gachas on All Saints' Day, November 1st. The house would fill with the aroma of cinnamon and toasted flour, and it became a symbol of the holiday. This was a time before bakeries sold buñuelos and huesos de santo, when family culinary traditions were stronger. Many of you may know this recipe, but I was craving something sweet and quick, so I decided to make them this afternoon.

Many of you may know this recipe, but I was craving something sweet and quick, so I decided to make them this afternoon.

Pour the olive oil into a skillet and fry the slice of bread, cut into small cubes, until golden. Set the bread aside. Add the flour to the skillet and stir constantly until it is toasted. Remove from heat and let cool.

While the flour cools, bring the milk, lemon peel, cinnamon stick, and vanilla bean to a boil in a saucepan. As it heats, add 4 tablespoons of sugar (or to taste).

After a few minutes, gradually pour the boiling milk into the skillet with the flour, stirring constantly. To avoid lumps, you can blend the mixture with an immersion blender.

Remove from heat when the mixture reaches your desired thickness. Pour into shallow dessert plates or bowls and top with the fried bread cubes.

Sprinkle ground cinnamon over the gachas and let cool.
