‘This refreshing mango Raita recipe takes hardly 7 to 8 mins to make it . In this Raita tempering is done and the tempering adds a lot of punch and flavour to the Raita.
Steps

In a mixing bowl take 2 cup thick curd /yogurt and add sugar. You can skip sugar if mangoes are sweet. Sugar is optional and beat till smooth and creamy.

In a blender add mango chunks and blend to a smooth paste.

Now add mango purée to the yogurt and mix well.

Heat 1 tsp ghee in a pan on a medium flame and add mustard seeds fry the mustard seeds till they crackle

Now add fenugreek seeds curry leaves and dry red chilli fry them till red chilli changes colour.

Transfer this tempering into the Raita and mix well.

Garnish the Raita with diced mangoes and chopped mint leaves.
