Ingredients

  • 1.1 lbspork ribs, separated (about 500 grams)
  • curry spices
  • 1/4 teaspoonground cinnamon
  • 1/4 teaspoonground ginger
  • 1/2 teaspoonground turmeric
  • 1 teaspoonground cumin
  • 1/2 teaspoonpaprika
  • 1/4 teaspooncayenne pepper or merquén
  • 1/4 teaspoonground coriander (ground cilantro seeds)
  • 1 1/2 teaspoonssalt
  • other ingredients
  • 2 tablespoonsall-purpose flour
  • 2 tablespoonsvegetable oil
  • 1onion, diced
  • 2 clovesgarlic, minced
  • 1 3/4 cupswater (about 415 ml)
  • 12baby carrots or carrot sticks
  • 1/2yellow bell pepper, diced
  • 1/2red bell pepper, diced
  • 2celery stalks, cut into sticks

Steps

    In a bowl, mix the spices with the salt and season the ribs. Coat the ribs in the flour. Heat a skillet with the oil and brown the ribs.

    Add the onion and garlic, and sauté briefly. Add the water. Bring to a boil, reduce the heat, cover, and simmer for 1 hour until the ribs are tender. The sauce will thicken; add a little more water if needed. Turn the ribs occasionally. While the ribs are cooking, cut the vegetables. When the ribs are tender, add the carrots and cook for 2 minutes.

    Add the bell peppers and celery, and cook for 2 more minutes. The vegetables should be just tender. Serve with Basmati rice, your favorite rice, or couscous if you prefer.
