Baked Swiss Chard Empanadas

I made these empanadas using Adriana's excellent empanada dough recipe from this app, plus a splash of white wine. Following the proportions for 4 3/4 cups flour (about 600 grams), you get 8 large empanadas, filled with colorful Swiss chard from the garden.

Sauté the onion, add the beef or mushrooms, and season to taste with salt, pepper, and oregano.

Add the chopped Swiss chard to finish the filling.

Fill the empanada dough with the Swiss chard filling, olive, and hard-boiled egg. Close and brush with the beaten egg and milk mixture. Bake in a preheated oven at 400°F (200°C) until golden brown.
