Ghee Fried Mixed Nuts

A basic recipe that is a must for this festive occasion in every Muslim household. We Hyderabadis do it this way in order to ease and quicken our process of cooking this Eid special dessert famously known as Sheer Khurma. The whole point in doing it is that it will come as handy when this dessert is being made throughout the Eid celebrations. All we need to do is, boil milk, add fried sewaiyan and cook as required and then finally top it up with these crisp and crunchy mixed nuts. It becomes way lot easier this way and everytime guests show up, you can use them as needed. In the same way, sewaiyan can also be shallow fried in ghee and stored in airtight containers.

Soak all the nuts separately in enough water for 3-4 hours. Remove the skins of Almonds and Pistachios at first. For the Cashewnuts, just cut them into thin slivers as possible directly. Cut both Almonds and Pistachios also as thinly as possible.

As for the Charoli Seeds, just crush them in between your palms for removing the skin. Do not cut them. Leave them as it is. And if some of their skin doesn't come off easily, leave them as it is.

Spread them on a plastic sheet or a cotton cloth to dry. Let them dry to make them crisp and crunchy. After 3-4 days, shallow fry them in ghee either in deep pan or a kadai on a low heat. Fry them all separately or all together.

Keep turning every now and then to ensure even colouring and frying. Let cool for sufficient time and then store in airtight containers in the freezer. Use these nuts in Eid special dessert Sheer Khurma.
