These are very moreish, cheesy nibbles, ideal with a pre-dinner drink. They can be plain, as here, or topped with chopped nuts before baking (walnuts are especially good.) They are an adaptation of a recipe my Mum used to make years ago, a family favourite.

Ingredients

  1. 4 ouncesplain flour
  2. 3 ouncesbutter
  3. 3 ouncesfinely grated cheese
  4. Pinchpaprika or cayenne pepper
  5. 1beaten egg

Steps

  1. 1

    Sieve the flour and paprika/cayenne and rub in the butter thoroughly. Add the cheese and knead till it comes together. (You may need to add a tiny amount of the beaten egg.)

  2. 2

    Roll out the dough fairly thinly

    Cut out squares, then cut each square in half to make triangles. Brush with the beaten egg.

    Bake for approx 15 minutes at 190 degrees, until golden brown.
