Steps

Take water in a bowl and clean the potatoes with the toothbrush to remove all the mud/ dirt.

Cut the potato into 8 wedge-shaped pieces likewise for all rest. Check the number of pieces depending on the servings.

Take water in the bowl and Rinse all the pieces once again so that leftover dirt will be removed. Throw the leftover water.

Take 1 liter of water in the bowl and drop all the potatoes in and turn on the gas to high flame and let it boil for 10 mins.

Take out 1-2 pcs randomly and check whether it's been cooked well with the knife/ hand. Once done, throw the water and keep the potatoes aside for cooling.

Procedure for making Pot. wedge batter. Take a bowl and add 70 gms of maida flour with 1/4 cup of corn flour. Further Add 1 teaspoon of white salt, 1 spoon of chilli flakes and Oregano powder. Place the stalks on the chopping board and chop coriander leaves in fine pcs.

Now mix it well with your hand for 2-3 minutes. Make sure it becomes fine mixture. Now add 2 tb spoons of liquid butter into the mixture and mix it well again. Keep adding water slowly till it becomes thick liquid batter.

Now your batter is ready. Move the batter to another bowl and drop 2-3 potatoes into it. Rinse well in the mixture.

Turn on the gas at high flame. Add 1/2 liter Oil in the pan. Drop the piece into the oil and let it fry for 10-12 mins.

Remove the wedges as it turns golden brown in colour means it's cooked well and take it out on a tissue paper.

Your Crispy and perfectly cooked wedges are ready to be served. The presentation can be done in a different impressive way. Please check on google.
