Focaccia with Tomato and Basil

In my opinion, as someone who prefers savory snacks, this is the most wholesome snack you can have. Made at home with sourdough starter, fresh cherry tomatoes from the garden, fragrant basil leaves, extra virgin olive oil from our own olives in Torre Canne di Fasano, and the main ingredient, all-purpose flour from the Cisternino mill—what can I say? It's the best of our Puglia region!

Mix the sourdough starter, flour, salt, warm water, and a pinch of honey to make the dough. In the final kneading, add 2 tablespoons of olive oil. Let the dough rise until it triples in size, working it in two or three stages.

Spread the dough in a baking pan. Top with halved cherry tomatoes, pressing them into the dough, add basil leaves, sprinkle with salt, and drizzle with olive oil. For extra moisture, you can brush on a 50/50 mix of water and olive oil.

Bake at 355°F (180°C) with convection or 390°F (200°C) in a conventional oven. If you like, you can also top it with cooked ham or mortadella. Enjoy this snack for both kids and adults!
