In a pressure cooker add chickpea and water, let it cook for 10mins like 2 whistles, allow it to cool down completely, Then in a blender add rinse and drain boiled chickpea, cold water,tahini, garlic paste, salt, olive oil and vinegar. Dont blend too much otherwise it will become very smooth. It should be in a rough texture.

Transfer it to a serving bowl, drizzle the top with olive oil sprinkling it with paprika, plus maybe a sprinkle of chopped fresh parsley.

Of course, you can always use hummus as a dip. But it’s also delicious used in:toast,burgers,wraps,salads.
