Tabbouleh is a traditional Arabic salad and is very nutritious.

Soak bulgur wheat in boiling water for 30 minutes. Cover and set aside. Dice the tomatoes and green onions. In a big bowl add the freshly chopped parsley, mint, tomatoes and mint. Drain any excess water from the bulgur wheat and add to the chopped vegetables. Add salt, pepper, cranberries and olive oil and mix well. Enjoy
