Spinach Borani Dip

Steps

Chop the garlic fine. Chop the mint leaves fine. Whisk the yoghurt well. Add some of the chopped garlic to the yoghurt

Blanch the spinach and drain out all water. Chop fine

In a wok heat 1 Tbsp olive oil and add rest of the garlic. Sauté for a min and add the chopped spinach. Sauté for 2-3 mins. Set aside

Cool the spinach and drain out all excess water again. Add to the yoghurt. Mix very well

Before serving add to a bowl and garnish with chopped pistachios, drizzle with lot of olive oil and add the mint leaves. Enjoy with Roti
