It's being served with youghurt along with garlic chutney, it's a bit darker in shade as compared to an ordinary pulao, red chilli powder and white pepper powder gives this pulao it's unique taste. It can be prepared either in beefor with mutton both.
For two person it costs around 230 rs.

Ingredients

  • FOR YAKHNI:
  • 1 1/2pao beef
  • 2 cupbasmati rice
  • 1onion
  • 1bulb garlic
  • 2 inchginger piece
  • 1tomatoe
  • 2green cardimom
  • 1black cardamom
  • 1ts fennel seeds
  • 1badyan (star anise)
  • 1ts coriander seeds
  • 1 inchcinnamon
  • 5cloves
  • 12black pepper
  • 1Bay leaves
  • 1ts salt
  • FOR MASALA:
  • 1/2 cupghee
  • 1ts ginger garlic paste
  • 1onion
  • 1ts red chilli powder
  • 1ts white paper powder
  • 3long (cloves)
  • 1bay leave
  • 1 inchcinnamon
  • 3green cardimom
  • 1/4 cupyoghurt
  • 1/4ts kewra
  • 1 1/2ts salt
  • FOR RED CHUTNEY:
  • 10-12garlic
  • 1ts cumin seeds
  • 10red chilli whole
  • 1/2ts salt
  • 1ts lemon juice

Steps

    Wash beefand add in it all yakhni ingredients along with 5 cups of water and wait till beefgets tender.

    Soak rice half an hour in water. Take ghee in a pan and add in it onion, bayleaf, longg, cinnamon and cumin seeds and light brown the onions in it, now add ginger garlic paste. Take out yakhni's ginger, Garlic and onion squeeze them, discard their peels.

    Strain yakhni then add beaf, red chilli and white pepper in that brown onion and youghurt, then bonify for 3-4 min. Now add that strained yakhni in it and boil it, now add rice. Cook it till all they yakhni get dried on medium flame. Add kewra and let it get it's dumm for 10min.

    Mix all chutney ingredients in blender with water and make it into a paste. Serve your pulao with this chutney along with raaita and salad.
