Ingredients

  • 3ripe bananas (mashed)
  • 1/2 cupcoconut oil or canola oil (use whatever you have in the kitchen)
  • 1/4 cupbrown sugar
  • 1/4 cuphoney
  • 2eggs
  • 1 cupmocaf flour (about 135 grams)
  • 1/2 cupoatmeal flour (about 60 grams)
  • 1/4 teaspoonsalt
  • 1 teaspoonbaking soda
  • 1/2 teaspoonvanilla extract
  • Topping: chocolate chips (to taste)

    In a bowl, add the eggs and beat lightly.

  2. 2

    Add the oil, mashed bananas, brown sugar, honey, and vanilla extract. Mix until well combined using a whisk.

  3. 3

    Add the mocaf flour, oatmeal flour, salt, and baking soda (sift directly into the banana egg mixture). Mix until just combined, do not overmix.

  4. 4

    Prepare a baking pan lined with parchment paper and greased with oil.

  5. 5

    Pour the batter into the pan, tap the pan to release air bubbles, then sprinkle with chocolate chips.

  6. 6

    Preheat the oven and bake for 45 minutes. I use a conventional oven without temperature settings, just top and bottom heat. Check with a toothpick; if it comes out clean, it's done.
