I have made this bihar famous dish without eggplant as my Dad doesn't like it. So gave chokha a twist and has infused smoky flavour into it with the help of coal to replace the eggplant roasted flavour. Do try this recipe.

Ingredients

18 Litti
  1. For Litti Dough
  2. 3 CupsWhole Wheat Flour
  3. 1.5 TspSalt
  4. 5 TbspGhee
  5. For Litti Filling
  6. 1.5 CupSattu flour
  7. 1/4 cupFresh Coriander
  8. 1finely chopped Onions
  9. 3Finely chopped Green Chillies
  10. 1 TbspRoasted Cumin Seeds Powder
  11. 1.5 TspRed Chilli Powder
  12. 1/4 TspCarom Seeds
  13. 1.5 TspSalt
  14. 1 TspGarlic Paste
  15. 1/2 TspGinger Paste
  16. 1 TbspMango Pickle Paste
  17. For Chokha
  18. 10Potatoes mashed
  19. 5Tomatoes
  20. 6Green chillies chopped
  21. 1/2th cup fresh coriander
  22. 6-7Garlic Cloves
  23. 1.5 TspSalt
  24. 1.5 TspRoasted Cumin Seeds Powder
  25. 1 Tbsplemon juice
  26. 2small coal pieces

Steps

    Firstly, we will knead flour for Litti dough.

    So in a big plate or bowl, take 3 cups wheat flour, add salt and ghee and mix very nicely.

    You should get such texture.

    Now taking normal water gradually, knead the flour into medium dough normally. Here i have used more than 1/2 cup water.

    Now cover with cloth and let it rest for minimum 15-20 minutes.

    Now lets prepare filling to be filled inside litti.

    In a big mixing bowl, take sattu flour, add salt, red chilli powder, carom seeds, roasted cumin seeds powder and dry mix.

    Now add onions, green chillies, fresh coriander, ginger garlic paste.

    Lastly add most important element-Mango pickle! Mashed ! Mix everything nicely.

    Now it will be still powdery which will not be comfortable to be used as filling inside.

    So sprinkle little water until the filling becomes muddy in colour and gets the texture to get collected as shown.

    Now coming back to Litti Dough- After the resting time is over, grease with little ghee again and knead a little.

    Now take a small portion of dough and spread it like small hollow round shape as shown.

    Take the filling and keep inside it, covering and closing from all sides very carefully making into a smooth ball.

    Now brush it with ghee from all sides.

    Preheat a tandoor or Otg for 10 minutes. Here i am making litties in tandoor today.

    Place all the littis on the rod. Cook for 15 minutes at low medium flame flipping sides in between.

    Cook until half charred and half light brown.

    Please note: if you are baking in otg then bake at 180 with both rods on in a preheated oven. You can also bake in Appam pan but it takes 30-40 minutes and size is very small

    Litti is ready. Dip in Ghee at the time of serving.

    Now making chokha- it is authentically made with potatoes and Eggplant but not everybody eats eggplant. So i have made chokha here from potatoes goving them smoky flavour through coals in order to compensate for the eggplant roasting.

    So firstly roast the tomatoes on gas. Better if you roast garlic and green chillies along with it.

    Then let it cool down and peel skin. Cut into pieces for easy mashing.

    Now in a big mixing bowl, take mashed potatoes, roasted tomatoes, green chillies, coriander leaves, garlic,lemon juice, salt and roasted cumin seeds powder.

    Mix and mash everything nicely! Now we will give smoky flavour to it.

    Burn coals on a burner.

    Place the coals in a steel bowl and place in between the chokha.

    Pour the ghee on top of coal and immediately cover with plate to capture all smoke inside.

    Leave for 15 minutes as it is.

  30. 30

    After 15 minutes, remove the coal bowl. Mix and your chokha is also ready!

    Now serve the litties hot with spicy chokha and Tomato Garlic chutney. Accompany with Green mint chutney and spicy onion salad for enhanced taste.
