  1. Boneless skinless chicken breast (6 ounces each)
  2. 1egg, lightly beaten
  3. 1 cupbuttermilk
  4. 1-1/2 teaspoongarlic powder
  5. 1 cupall-purpose flour
  6. 1 cupseason bread crumbs
  7. 1 teaspoonsalt
  8. 1 teaspoonbaking powder
  9. Oil for frying
  10. Minced fresh parsley,optional

    Cut the chickeninto.1/2 -in.strips,Combine the egg,buttermilk and garlic powder in s shallow dish,add chicken.turn to coat,cover and refrigerate fir 2-4 hours.

  2. 2

    Drain and discard marinade.in another shallow dish,combine the flour,bread crumbs,salt and baking powder,add chicken.toss to coat.

  3. 3

    In a deep cost- iron electric skillet, heat oil to 375 fry the chicken in batches until golden brown on both sides,4-5 minutes.Drain on paper towels.If desired,sprinkle with parsley.
